    Abstract

    Methyl 13-hydroperoxy-cis-9-trans-11-octadecadienoate (13-HPODMe) was incubated with ditert-butyl peroxyoxalate or copper(II)palmitate for 3 h at 38 °C. Numerous products were identified and quantitatively analysed. The chemical structures and the amount of products resulting from the 13-HPODMe/Cu(pal)2 system were influenced by both the presence of oxygen and the addition of some antioxidants (α-, γ-, δ-tocopherols, ascorbyl palmitate).
